Fruit and Nut Balls: an easy healthy snack recipe

healthy snack

My kids are big snackers and I'm always working hard to make sure that my house is full of healthy snack choices. We snack a lot on granola bars, fresh fruit and yogurt. But the best snacks are the ones we make ourselves, especially when they're easy and the kids can help. Trina from O'Boy! Organic Blog shared her Fruit and Nut Balls recipe and I can't wait to make it. [amd-zlrecipe-recipe:11]   Here's the menu planner. What's on your menu this week? … [Read more...]

Fish Taco Recipe

easy fish tacos

I'm a big, huge fan of fish tacos. I've lavished the gourmet-types (a la Seasons 52 and Bonefish Grill), I've had them from the grill and I've even enjoyed them on a horse farm (oh, yes. I did.) Recently, Pam from IYAMPAM shared her Fish Taco Recipe with me. (She served the waffle fries and rice on the side, but feel free to be daring and mix it in.) [amd-zlrecipe-recipe:10]   Pam is an educator librarian who is drawn to the little ones and enjoys helping others.  Pam is a … [Read more...]

Vegan, Gluten-Free Smoothies

smoothie recipe

Allergies and eating restrictions can make it so that many kids don't get to enjoy life's simple pleasures, like milkshakes and smoothies. I've always taken for granted that I could easily have a milkshake anytime, but having a child with a Lactose-Intollerance has opened my eyes. The amazing Roo from Nice Girl Notes' children have stronger allergies than my kids, and she's created smoothie recipes her kids can enjoy and I can't wait to try. (I especially love the alternative that sneaks in … [Read more...]

Quichata: Spinach, Salmon & Cheese

salmon, spinach & cheese quiche frittata

This is what happens when I start creating a meal without a recipe. I get so lost in what I'm creating that I lose track over whether it's a quiche or a frittata. This breakfast for dinner treat could be a quiche. But it could be a frittata. Frittata: An Italian dish made with fried beaten eggs, resembling a Spanish omelet. Quiche: A baked flan or tart with a savory filling thickened with eggs. You decide. Because, either way, this was delicious and everyone in the house asked for seconds. … [Read more...]

Extending reading through cooking: A fishbowl recipe

At the end of a chapter book that Big recently picked up, he shared the excitement of the story: the happenings during an aquarium field trip. While talking with him, I recalled an easy activity to do with children: a Jello fishbowl, that would encourage us to discuss the book further. I rushed off to get the supplies, excited to extend reading through cooking and kitchen time. While Big and I quickly prepared the Jello for this recipe (after all, Jello's a pretty easy thing to make) we took … [Read more...]

Favorite one pot dinners from Parents Need to Eat Too

Last week I reviewed Parents Need to Eat, Too, a cookbook of easy meals for new Moms. I also added three of the meals to my meal plan calendar so that we could test the recipes and report back to you. The report? My children were pleased. Very pleased. All three meals I selected were one-pot dinners from Parents Need to Eat Too, perfect for this busy time of year for us. The Lemon-Yellow Chicken was so easy to make and it met comments of "this is marvelous" from Big and "a Ten" from Middle. … [Read more...]
